Over the last few years working the pits at Barbecue Mafia, I’ve made hundreds of smoked sausages every single week and served them to thousands of customers. That gave me the chance to constantly test, tweak, and refine my recipes in a real world BBQ environment.

Big Bad Smallgoods was built from my obsession with proper handcrafted snags, Texas-style BBQ, and bold flavours. Every sausage is made with quality meat, hand blended spices, natural casings, and zero shortcuts. No fillers, no pre mixes, just real snags made for BBQ lovers, home cooks, and backyard legends.

Along the way, I’ve also run dozens of sausage making classes and taught hundreds of people the art of making great snags at home. I’m passionate about sharing what I’ve learned and helping people understand what goes into making a sausage with real flavour, texture, and snap.
